5 pounds of carrots arrived in my Good Eggs order last week when I was expecting only one pound. It was my mistake, I ordered a bulk count. Luckily, if you store carrots in water in the refrigerator they’ll keep for two plus weeks, but I still needed to use them so I started experimenting and this side salad turned out delicious! Now, on to the good stuff…

Tips for Making Shredded Carrot Salad

Shredding Carrots. One and a half pounds of carrots is a lot of manual work if you plan to use a grater, so I recommend using a mechanical device such as a shredder attachment on your food processor or stand mixer. You may also purchase pre-shredded carrots.

Let it rest. Let the salad marinade for at least 15 minutes before serving. The juice from the carrots sweetens the salad and the barberries soak up the juices, making their tart taste more pronounced.

Finding barberries and substitutes. Middle Eastern markets carry dried barberries (zereshk), but organic is hard to find unless you shop online. If you cannot find dried barberries, replace them with dried tart cherries which are available at most grocery stores.

Description

Ingredients

Scale
  • 1.5 lbs carrots, shredded
  • 1/2 white onion, chopped
  • 1/4 cup dried barberries
  • 3 Tbsp apple cider vinegar
  • 2 Tbsp olive oil
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • 1 cup fresh parsley, finely chopped

Instructions

  1. Combine all ingredients. In a large mixing bowl, combine all ingredients.
