A few weeks ago I thought I ordered one pound of nantes carrots to discover that I had ordered 1 5-pound quantity of carrots instead. As a result of this mistake, I began creating carrot-forward dishes. There’s only so many roasted carrots that one can eat. I started experimenting and this carrot salad with barberries turned out delicious so I thought I’d try it with a slight twist to the ingredients and it did not disappoint! Now, on to the good stuff…

Tips for Making Simple Carrot Side Salad

Shredding Carrots. One and a half pounds of carrots is a lot of manual work if you plan to use a grater, so I recommend using a mechanical device such as a shredder attachment on your food processor or stand mixer. You may also purchase pre-shredded carrots.

Let it rest. Let the salad marinade for at least 15 minutes before serving. The juice from the carrots sweetens the salad and the onions soak up the vinegar, making their taste more tangy.

Ingredients

Scale
  • 1.5 lbs carrots, shredded
  • 1/2 white onion, chopped
  • 1/4 cup toasted sesame seeds
  • 3 Tbsp rice wine vinegar
  • 1 1/2 Tbsp Avocado oil or peanut oil
  • 1/2 Tbsp sesame oil
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • 1 cup fresh cilantro, finely chopped

Instructions

  1. Combine all ingredients. In a large mixing bowl, combine all ingredients.
  2. Let it rest. Let the salad marinade for at least 15 minutes before serving. The juice from the carrots sweetens the salad and the barberries soak up the juices, making their tart taste more pronounced. Enjoy cold or room temp.
