One magical week about 2 years ago, Kia and I went to Paris on a whim. We booked our flights on Friday, dropped Layla (then 2) and Luis (our dog) off at Grandma and Grandpa’s on Saturday, and left on Sunday. We both had to work so it wasn’t as magical as it could have been, but we were able to enjoy a few great dinners, a cooking class, and on our last night while having drinks at our hotel bar we were served these toasted herbes de provence cashews. It ended our trip with a flavorful memory.

For weeks after the trip I made herbes de provence cashews at home and would put them in jars and bring them to work as a nice little snack. They are salty, crunchy, a little sweet, and very satisfying. I hope you enjoy them as much as I do.

Description

A healthy treat when in need of a tasty salty snack with crunch. Great for parties, or snacking. Herbes de Provence Cashews are Vegan, Dairy-Free, and Whole 30. 


Ingredients

Scale

12oz Cashews
1/4 tsp Olive Oil
1/2 tsp herbes de provence 
1/2 tsp fleur de sel (or sea salt)


Instructions

  1. Toast. Add all ingredients to a hot skillet, tossing frequently until cashews are toasted. You will know when they are done because the cashews will be a little shimmery and have specks of brown.
