A delicious orange-colored fruit, Fuyu persimmons are sweet and juicy, even when not fully ripe. Fuyu persimmons make a delicious topping for yogurt or oatmeal, making them the perfect treat for this recipe. Additionally, Greek yoghurt is thicker and tangier than regular yoghurt because it is strained multiple times to remove liquids. It is a great addition to breakfast cereals, or a tasty treat topped with honey, fruit, and nuts. It can also be used as an accompaniment to savory dishes, in place of soured cream or mayonnaise. Autumnal yogurt with persimmons and pumpkin seeds is more of a guide than a recipe. It’s a great breakfast packed with protein and vitamins to kickstart the day, or a smaller portion could be used for an afternoon snack. This is best made with individual portions versus a communal bowl. Now, on to the good stuff…
TIPS FOR MAKING AUTUMNAL YOGURT WITH PERSIMMONS & PUMPKIN SEEDS
Choose Plain Yogurt. I make it with whole fat Greek plain yogurt. My favorite brand is Wallaby. But feel free to choose the style of yogurt you like best. Just make sure to use plain yogurt as flavored yogurts have a lot of unnecessary added sugars – we’re adding natural sugar with the fruit, so there’s no need for the artificial ones.
Toppings. Furthermore, I like to choose a combination of crunchy and sweet toppings to go with the creamy yogurt. In this recipe, I use pumpkin seeds and persimmons, but feel free to switch it up and let me know how it goes!
