Description
A deliciously simple carrot side salad with toasted sesame seeds which comes together quickly and keeps well. Vegan, Gluten-Free, Whole 30, Raw.
Ingredients

- 1.5 lbs carrots, shredded
- 1/2 white onion, chopped
- 1/4 cup toasted sesame seeds
- 3 Tbsp rice wine vinegar
- 1 1/2 Tbsp Avocado oil or peanut oil
- 1/2 Tbsp sesame oil
- 1/2 tsp sea salt
- 1/4 tsp black pepper
- 1 cup fresh cilantro, finely chopped
Instructions
- Combine all ingredients. In a large mixing bowl, combine all ingredients.
- Let it rest. Let the salad marinade for at least 15 minutes before serving. The juice from the carrots sweetens the salad and the barberries soak up the juices, making their tart taste more pronounced. Enjoy cold or room temp.
