Description

Whip up this Mexican style quick broccoli slaw salad in 5 minutes for a delicious side salad. Plus, you can throw in a protein and make it a meal. Vegan, Dairy Free, Gluten Free, Whole 30.


Ingredients

  • 1 pkg Broccoli slaw mix
  • 1 pkg Coleslaw Mix
  • 1 medium red or white onion
  • ½ cup white vinegar
  • 2 avocados, sliced
  • 1 Tbsp refined peanut oil (or other mild flavored oil like avocado oil)
  • 2 limes juiced
  • Pinch Salt
  • 1 tsp pepper
  • 2 Tbsp cilantro
  • Optional: 1 mango

Instructions

  1. Pickle Onions. First, prepare the onions so their bite is milder. Simply chop your onion, place in a bowl and cover with vinegar.
  2. Combine Ingredients. In one bowl, combine all ingredients: Broccoli slaw mix, Coleslaw Mix, pickled onions, oil, lime juice, salt, pepper, cilantro, and avocados. 
  3. Serve cold or room temperature. Enjoy!

Notes

The buttery fat from the avocados balance the high acidity of this salad, so if you don’t have avocados, try adding some form of dairy like plain full fat yogurt or goat cheese (depending on recipe style you choose).

I choose peanut oil in most of my recipes where I don’t want a strong flavor. If you or someone you feed is allergic to peanuts, simply swap it for avocado oil.
